
Keto-fied Pizza Base

Today, we kick-off healthy eating! Taking to the spirit, we are working closely with a Mumbai-based food blogger, Mahua Kamat! Yes, yes, we know, celebrity in the house! So, well, we'll give you an insight into her world, through her blog thisphatlife.wordpress.com and the amazing food she cooks, as you will see through the duration of our Keto friendly recipes.
As for the Keto diet, here is an excerpt from her blog, which will give you a basic idea about the Keto way:
"Simply put The Ketogenic (or Keto) Diet is a super low carbohydrate high fat diet coupled with a moderate protein consumption. You’ll hear the term LCHF a lot. That’s where it comes from. Low Carb High Fat.
To follow this way of eating you need to reduce your carb intake quite radically and supplement it with increasing your fat intake. This drastic reduction in carbs gets your body to switch from using glucose for energy to using fats making your body go into a state of Ketosis.
To sum it up,
Low carb intake = Body in starvation mode (ketosis) = Body using fat for fuel (ketones) = Weight loss! Yay! (And an assortment of other health benefits)"

Ingredients
1 cauliflower (400 gms approx.)
½ tsp each of red chili powder, cumin powder, coriander powder and turmeric powder (this is optional. You can add more or delete it entirely. Up to you)
½ tsp salt (choose any- pink himalayan, celtic, garlic, table etc)
75 grams shredded mozzarella cheese (you can add more OR use cheddar instead OR mix the 2)
Directions
1Preheat oven to 190 ° C (Note-temperatures may vary between different ovens)
2Clean the cauliflower and cut into florets. Chuck it in a food processor, a batch at a time if need be and pulse till it’s chopped to small pieces resembling rice.
3Place the cauliflower ” in a microwave safe bowl and cover with cling wrap. Zap for 8-10 minutes or until cauliflower is tender. Once the cauliflower is cool to touch, strain as much liquid out as you can using a muslin cloth.
4Add the eggs, ginger garlic paste, spices, herbs, mustard, onion powder, cheese, salt and pepper to the strained cauliflower. Mix well to combine.
5Line a round pizza pan or a large roasting tin with parchment paper(I used a 13” round pizza pan). Lightly grease and layer the batter, flattening it with your hands to resemble the base of a pizza. Keep it as thin as you like.
6Bake for 20 minutes or till the edges start turning golden brown and the centre is cooked. At this point, your pizza base is ready to be topped with whatever keto friendly ingredients you like.
7Go crazy!
Notes from the Recipe Maker:
While this is a thin crust pizza, it isn’t crispy. This is the way I like it and it tastes yum.
